One of our favourite craft breweries here over at the AU is the consistent and imaginative White Rabbit. The sister brewery to Little Creatures, both occupying the same space in Geelong, have impressed with recent experiments like their red wine infused craft beer, so it stands to reason that this latest release is going to go down a treat. It’s a chocolate stout that’s been released just in a time for the Easter period, sticking to the brewery’s “Fermentation with Imagination” tag by partnering up with Pana Chocolate to make good use of their cacao.
The White Rabbit Chocolate Stout has been caramelised with Pana Chocolate by Head Brewer Jeremy Halse and his team, resulting in what’s being described as “a smooth, velvety stout with distinct chocolate undertones”.
“Following primary fermentation, the beer spent a short period of time in oak barrels and Brandy soaked staves immersed within”, said Head Brewer Jeremy Halse of how White Rabbit Chocolate Stout came to be. “A concoction of this beer, caramelised with Pana Chocolate, was then thoughtfully blended back – resulting in a smooth, velvety stout with distinct chocolate undertones”.
Those down in or visiting Geelong have an extra special chance to explore this beer, and a few others from White Rabbit’s range, as the Geelong brewery plan their “Easter Down the Rabbit Hole” event for April 13th. From 6pm Halse and Pana Chcoolate’s Pana Barbounis will be guiding guests through the various connections between beer and chocolate with pairings including Red Ale (that aforementioned red wine beer) with sour cherry and vanilla chocolate, and Dark Ale with fig and wild orange chocolate.
