Australian pastry chef Kirsten Tibballs enjoys a sterling reputation across around the globe, no doubt fueled by the title of “Queen of Chocolate” that follows her around wherever she goes. She has won gold medals at international pasty events, judged chocolate competitions in Paris and Japan, and has well and truly become one of Australia’s most anticipated chocolatiers. It’s then with great enthusiasm we went along to the launch of latest book, Chocolate, where the focus couldn’t be more obvious.
Taking place at Melbourne’s Savour Chocolate & Patisserie School (where Kirsten serves as Director and Head Pastry Chef), the launch was a showcase of the many recipes that can be found throughout her second ever book, spanning biscuits, pastries, cakes, sweet treats, and desserts for all levels of experience. Pages upon pages of her road-tested recipes lay next to some of the most delicious looking food photography in recent memory; the kind that actually physically hurts as you yearn for hits of gooey chocolate filled pastries and exquisite cakes.
The compendium of pudding perfection was written as an approachable and comprehensive introduction to that ever elusive next-level of chocolate, resulting in recipes that will hopefully lead to masterpieces like those pictured below.
