Zephyr Sky Bar pushes into the colder months with levitating cocktails (Sydney)

Sydney’s stunning open-air Zephyr Sky Bar are making the most of their first ever winter season, introducing a fresh new cocktail menu that includes a few innovative surprises for both guests of the Hyatt Regency and the general public. At the forefront is a gravity-defying Fig Leaf Sour, a levitating cocktail hovering over a magnetic base, claimed to be the only of its kind currently available in the Asia Pacific.

The Gold Leaf Sour is made from a combination of warming spices and figs, and gold flakes to garnish, served up in a levitating glass for a little pizzazz before it brings a little warmth to Sydney’s cool winter evenings.

“Our philosophy is to bring the best experiences to Sydney by pushing boundaries and creating an element of surprise”, explained bar manager Mirko Simonazzi. “Zephry’s panoramic views of Sydney Harbour and beyond is one of the best our city has to offer and should be enjoyed all year round, rather than exclusive in warmer months. We like to think Zephyr provides a warm winter oasis”.

Renowned mixologist Grant Collins helped shake up the extensive drinks list, which Mirko has switched up with his range of cocktails making use of fine spirits, liqueurs, freshly hand-squeezed juices and botanicals. This includes the likes of barrel aged vermouths served on tap and rums using hypersonic and sous vide infusions.

In addition to the Gold Leaf Sour the new range of cocktails includes a wide range of tastes and concoctions, including the sweet Smoked Chocolate Zazerac, made with rum or bourbon, white cacao, absinthe, Peychaud’s Bitters and smoked bourbon chocolate.
