After much hype Concept Burger has finally opened in Wolli Creek, bringing the suburb its very own contender in the very, very competitive scene of gourmet burgers in Sydney. This one’s got a neat little twist though, and with culinary adviser Tomislav Martinovic, the famous chef who helped make North Sydney’s Five Points Burgers a long-standing favourite, a collaborator on the new menu it seems the concept is far from gimmick.
Said concept is “burgers of the world”, inspired by some of the most distinctive and unique gastronomic cities including China, Japan, Portugal, Argentina, Italy, Canada and France. It’s not just small, lazy twists either; the menu boasts seven very well thought out burgers that represent a move away from different iterations of the sloppy American burger and push something a bit more refined.
The result? The Chinese burger comes with five spiced fried chicken, Szechuan pepper, celeriac slaw, baby cos lettuce and fermented chilli paste; the Canadian burger boasts a Black Angus patty with American cheese, maple-glazed streaky bacon, oak lettuce and Dijon mustard; the French burger has a roast field mushroom with truffle paste, Greyere cheese, oak lettuce and red cabbage slaw; and the Japanese burger is built with tempura fish, karashi mustard, pickled radishes, baby cos lettuce and yuzu kosho paste.
There’s a small selection of wine plus some fruity smoothies and a bunch of mocktails to wash these burgers down with. Though there’s only one single dessert, which is made with white chocolate mousse, cookie crumbs, pistachios, raspberries and passionfruit.
