Three Blue Ducks to open their first Queensland restaurant at the new W Brisbane

Not only is Brisbane getting an epic Australian return for the W Hotel brand with W Brisbane, but it has been confirmed that one of the property’s on-site restaurants will be none other than a Queensland iteration of Sydney-originated favourite Three Blue Ducks. The hugely anticipated April debut of the 312-room modern hotel will open up guests to all the trimmings that have made the hotel brand world-famous, from Bali to Hollywood, and there’s no doubt that Three Blue Ducks will be a major part of their unique offering.

This will be the fourth venue for Three Blue Ducks, which is in addition to their existing three locations across New South Wales. Those familiar with the eatery should already know to expect fresh, local and no-fuss dishes as the restaurant serves guests breakfast, lunch and dinner each day of the week. It’ll feature an evolving seasonal menu showcasing both Queensland and New South Wales produce alongside superior coffee, local craft beers, a curated wine list and signature cocktails.

“When approached by W Hotel to embark on a Three Blue Ducks venture in Brisbane, it was important to us to ensure that we shared the same values and sustainable business practices”, said co-owner of Three Blue Ducks Jeff Bennet. “We share the same ethos for quality and we’ll be using locally sourced produce that is farmed ethically. Although our current venues greatly differ in aesthetic, our philosophy and ethos remain very much the same and we can’t wait to work alongside W Brisbane with views over the Brisbane river”.

A wood fire oven, rotisserie and charcoal pit will all be included behind the kitchen to give the menu an extra punch, while a strong dedication to cold seafood will be maintained, with plans to include Moreton Bay bugs, spanner crab and oysters. The menu will feature favourites from other Three Blue Ducks restaurants, including spanner crab scramble with green mango, bean shoot salad, house made siracha and cashews; coal roasted lamb; and the eternally-loved corn fritters with guac, fermented cabbage, jalapeno, herb salad, labneh and poached eggs.
