Acclaimed chef Pablo Tordesillas (Ortiga) has come on board for one of Sydney’s newest and most exciting CBD restaurants, which opened up right near Hyde Park at the end of last month. Titled The Resident, the new venture from the team behind dumpling staple Lotus Dining is focused on bringing an original take on Mediterranean food to the scene, characterised by a vigorous atmosphere created for diners, complemented by fresh food, organic breads, and seasonal lunches by day, while night brings generous European dishes adapted to high quality Australian produce.
Sommelier Annette Lacey has helped lift this food with an extensive list of European and Australian wines, synced with Chef Pablo’s menu, which has seen him sourced ingredients from all over the country to use in dishes that include mussels, lemon myrtyle, artichoke, quince, anchovy & endive, WA octopus, Cooroong Angus skirt, and ajo blanco. Desserts round it all out with dishes like spaghetti pumpkin milhojas with crema and pepitas, and a smooth goat’s milk yoghurt with orange and rosemary brick. Those just looking for a snack can also pull up to the bar for a casual visit.
Drawing on it’s rich view of Sydney’s iconic Hyde Park, the fit-out of The Resident has been worked with scalloped green granite, leather and oak, and a minimalist focus by expert designer Paul Papadopoulos of design group DS17 (the geniuses responsible for Lotus the Galeries and Alpha Restaurant), bringing a bright and natural look to The Resident that mirrors Chef Pablo’s approach.
