The Light Brigade Hotel re-brands restaurant as Brigade Dining (Sydney)

Art-deco pub The Light Brigade Hotel has unveiled the next step of a new era for the historic Woollahra local. The venue’s level two restaurant has been revolutionised and re-branded Brigade Dining, with a kitchen led by Chef Marco Adler to ensure the complete aesthetic makeover is echoed in the restaurant’s food.

The famous Bayfield Family (ex-owners to Newport Arms, current owners to Dee Why Hotel sought to refurbish the pub after they purchased it earlier this year, aiming at creating a stand-out dining experience that is progressive but maintains the charm of the old venue. The result is an atmosphere that pulls on both a casual and premium dining experience, with Adler offering up a fusion of fresh, flavour-focused ingredients presented in a striking fashion.

On the menu one would find Maltagliati with King Prawns, Slow-Cooked Lamb Rump, Wagyu Beef Carpaccio, and Raspberry & Passionfruit Crème with Meringue Drops, across entrees, mains, and desserts. Given Adler’s history, most notable as Executive Chef for Fresh Catering, we’ve got some pretty high expectations!
