In the wake of all the New Year’s cheer the South Sydney suburb of Ramsgate will welcome a modern Greek-Australian patisserie co-owned by Aki Daikos, best known as the man behind the city’s super popular Tella Balls Dessert Bar. The Good Filo, co-owned by Daikos and Head Baker Kiriakos Metaxotos will open its doors on Rocky Point Road with a generous array of handmade Hellenism-inspired pastries, bougatses, tsourekia, and other traditional Greek treats crafted from long-standing family recipes.
Designed to pay homage to Thessaloniki, Greece’s second largest city, the new business is aimed at introducing locals to the diverse range of traditional Greek desserts that often fly under the radar for casual lovers of the cuisine.
“We learn so much from our elders. The best thing my Yiayia ever taught me was how to love. Now just other people, but everything I do, especially baking”, said Daikos. “Luckily as third generation bakers, we’re doing Yiayia proud”.
“For me, baking is in our DNA, as is Greek hospitality,” added Metaxotos. “At The Good Filo we offer the same level of Greek hospitality, known as Filoxenia, which Greece has become renowned for”.
On the full menu will be numerous gourmet salads, Greek pitas, paninis, pastries, moussaka, baklava, house-made bread, traditional Greek frappe, and Peynerli, which is a boat-shaped Greek pizza. Though that all sounds lovely, we’ve especially got our eyes on the Bougatsa, which is a Greek pastry consisting of semolina custard, cheese or minced meat filled between layers of filo, and the Galaktobourko, which is semolina custard wrapped in golden filo.
