The team behind The Greens North Sydney and Camperdown’s sprawling acre Eatery are putting the finishing touches on their third Sydney venue to open in Mosman at the beginning of next month. John Tully and Luke Heard will present the ritzy North Shore suburb with The Fernery, a lush garden terrace poised to dominate the summer months with an all-encompassing vista that spans the Sydney Opera House, Harbour Bridge and city skyline pouring in over the casual rooftop eatery.
Head Chefs Gavin Gray and Mitchell Davis will be heading up the kitchen with a modern Australian menu focused on share-style dining and elegant sessionable drinks, lifted by Urban farmer Adrian Baiada who has created the kitchen for the chefs to experiment with different seasonal touches and a traditional wood-burning grill called a josper.
The locally sourced produce should pair up well with the dedicated rosé bar, a set-up that focuses on straight-from-the-barrel wines complemented by a cocktail menu that makes use of herbs straight from the rooftop garden. There’ll even be a separate gin room to further put the focus on botanicals, showcasing locally crafted Australian distillers.
“We’ve designed The Fernery as a place for guests to catch up with a casual cocktail or to enjoy a long lunch”, said Heard and Tully. “It’s a space that is visually stiking as it is welcoming”.
The elevated rooftop dining experience will be shaped by interior designers Rony Design Co who have played with the abundance of natural light to craft a green oasis with plenty of plant life, flowing up a dramatic spiral staircase and into a chic gin room which pulls on views of North Head, twisting through a spacious indoor dining room, and ending up on a spectacular outdoor terrace with a greenhouse inspired aesthetic.
