Sydney’s got a luxe new weekend brunch filled with French champagne and mimosas

Making excellent use of their gorgeous The Cortile dining space, InterContinental Sydney have just launched a “buffet marketplace” brunch to take place every weekend for hotel guests and local visitors. “Brunch at The Cortile”, which kicked on on Saturday 23rd September, will be a special offering from the high-end hotel, tempting guests with a refined dining experience that features the season’s freshest ingredients with house-made signatures, contemporary favourites and, drinks like French champagne, mimosas and bloody marys.

Head Pastry Chef Simon Veauvy is behind it all, curating the buffet experience with a menu full of both sweet and savoury items like homemade ricotta pancakes, Belgium waffles, vanilla millefeuille, rhubarb meringue tarts, homemade jam and honeycomb, seasonal vegetable quiche, free-range eggs made to choice, cheese and charcuterie selections, and a dedicated bread station with Pepe Saya butter.

“We started with one purpose”, explained Veauvy. “[That’s to] welcome guests into a peaceful, charming ambiance where they can relax and gently start the weekend with great food and family. My team has created many homemade favourites and then added elements of refreshing and surprising dishes to delight any palate”.

The brunch will be available every Saturday and Sunday at The Cortile from 10:30am to 12:15pm. Throughout September and October the brunch will be priced at $49 per person, and then after that – from 5th November – it’ll go up to $65pp (including glass of sparkling), and $75pp (including glass of French Champagne) with kids under 12 eating for $35pp.
