Trained under prominent Brooklyn-based pitmaster Nestor Laracuente, Sydney based BBQ champ Dan the Man has decided that his hometown should never want for low-and-slow BBQ, making plans to introduce a new “Up In Smoke” series to kick off this August. Setting up shop the first Friday of every month for the rest of the year, Dan the Man will take over The Field at Eastern Suburbs Rugby Club in Bellevue Hill to light up the smoker and bring Texas-style BBQ to locals and visitors.
Each night of “Up in Smoke” will feature slow-smoked, Texas style beef brisket, pulled pork, and a rotating selection of meats like beef sausage, pork ribs, and chicken wings, treating guests to succulent meats that are delivered straight out of the smoker before being carved up by Dan and served on American-style trays. Of course, no Texas style meat platter is complete without those necessary sides so a selection of mac ‘n’ cheese, coleslaw, dirty white bread, pickled, and jalapenos will be included.
Having been a regular understudy of Laracuente’s, Dan has also tapped the “Brooklyn Pit Rat” to ship his famous range of dry rubs to Sydney exclusively for this BBQ series.
“Any opportunity to light fires and stand by a smoker all day, I’m day,” said Dan. “We use smoking techniques across many of our Dan The Man cooking menus, but the chance to dedicate a whole night to slow-cooked meats is something I’ve been dreaming of for years”.
Those heading along only need to fork out $35 each for their own tray, which will be packed with brisket, pilled pork, rotating meats, and sides. Tickets can be pre-purchased from Eventbrite.
