Surry hills is getting a hybrid sneaker bar & eatery with fried chicken, fancy champagne and fresh kicks (Sydney)

The team behind popular Glebe joint Thievery are bringing a new concept to Surry Hills, planning a hybrid sneaker bar and eatery titled Butter to be opening up this month, described as a “street meets luxury mash-up.” Inspired by New York’s hip-hop culture and designed by Alex Zabotto-Bentley of AZB Creative (Pink Salt, Casablanca), the new venue will be bringing in an exciting range of food pumped out of a kitchen led by 2015 Josephine Pignolet Young Chef of the Year Julian Cincotta, who joins after impressive runs at Nomad and Rockpool

Loud hip hop and loud interiors is what one can expect when heading along to Butter, with Zabotto-Bentley drawing on a palette of burnt coal, rendered raw concrete, and pumice to pay homage to the underground bars of New York, Barcelona, and Tokyo. The space eats 40 and will be brightened by a neon set of photographic images plastered across the ceiling.

The American-Asian food menu will be offering packs and sides, like the 3Pac (one thigh piece fried chicken, two tenderloins, and a side of slaw), the Chicken Sandwich (served in a sneaker box with pickles, dashi butter, and a side of slaw), Fried Tofu Nuggets, and a massive Size 13’s Box (four thigh pieces, nine tenderloins, two sides of pickles, two sides of slaw, and three sauces – honey mustard, butter ranch, and smoked aioli). With the focus on crispy fried chicken, there will also be four levels of spice to choose from: Naked, OG, Fire, and HOT AF. Dessert will include a butter-inspired soft-serve ice cream, with the flavour rotating each month and including the likes of Buttery Croissant, Burnt Butter, and Chocolate Peanut Butter Cup. All options will be available for takeaway.

Taking it back to Puffy’s shiny suit days in hip-hop, the drinks menu, curated by Bar Manager Paul Flynn, will be bringing in a range of sparkling wines including Pét-nat and Crémant, artisanal champagnes from Larmandier-Benier and André Beaufort as well as prestige classics like Dom Pérignon and Krug. These will be available right next to an interesting cocktail menu featuring creations like the Frozen Hennessy Cherry Cola and the Butter Washed Vodka, as well as a small local and international wine list with focus on natural, minimal intervention wines.
