A seven-course vegan feast is being planned by a group of seven Melbourne chefs, all of whom will join forces at The Vincent later this month to explore and highlight the potential of modern vegan cuisine. What’s more is that the whole feast has been designed around and inspired by the classic tale of The Jungle Book, even taking on the name of “Mowgli’s Marvellous Feast” with plans on matching food with vegan wines, spirits and cocktails.
The chefs – Christian Abbott, Dylan Kemp, Tim Fowler, Abby MacGillivray, Pierre Guyot, Nicholas Hollands and Jake Furst – will each design one course for the menu, drawing on a huge well of experience that takes influences from just about everywhere from around the globe.
“We’ve had a huge amount of interest in the event already, I think people are really excited to try something a little out of their comfort zone”, said The Vincent’s Venue Manager Tish Walker. “It’s also an exciting concept because of the way we are working with multiple head chefs, each devoted to a single course. There’s going to be some spectacular results”.
The Vincent, one of Albert Park’s historic hotels, will be hosting this special dinner at 6pm on Wednesday 22nd November with the menu featuring the likes of roasted capsicum gazpacho with salt baked eggplant and chlorophyll; a curry of coconut, corn, squash, eggplant, peanut and chilli; miso eggplant with sesame crackers and pickled daikon; and a vegan dessert tart with berries, bark and cheesecake.
