Rockpool Dining Group opens Rosetta Ristorante in Sydney next week

Rockpool Dining Group have expanded on their award-winning Melbourne ristorante by finally bringing Rosetta to Sydney, adding to the city’s rich scene of sophisticated Italian dining with a massive three-level venue which features a panoramic outdoor terrace a mezzanine dining room, and a split-level bar.

Set to open next week, 15th August, Rosetta Sydney will be leaning towards a seafood focus to differentiate it from it’s Melbourne sister, with the menu set to showcase produce from sustainable suppliers and farmers including Marine Stewardship Certified yellowfin tuna landed in Mooloolaba, and King George Whiting, John Dory and squid from Corner Inlet, Victoria.

Milk-fed veal will be a strong focus for meat lovers, with it used in dishes like vitello tonnato, veal tartare, osso bucco and cotoletta. Dessert lovers also get a major nod with house-made dolci including cassata, cannoli, panna cotta and Torta di Verona. True to Rosetta’s Italian roots, bread and pasta are made in-house every day.

Of course, the Italian roots also mean that aperitivo cocktails will be playing a big part in the drinks menu, alongside digestivos and a bitter selection with five variations of negroni, classic Italian and local beers, over 30 gins and an extensive collection of whisky, grappa, brandies and rum. The wine list will be a true trek through the regions of Italy, showcasing classic flavours and home-grown varietals.

“The seafood and produce we’re sourcing is second to none, the freshness and flavours will speak for themselves and we’ll tease out some of those stunning characteristics with a simple Italian touch”, offered Rockpool Dining Group Culinary and Brands Director Neil Perry.

Rosetta Ristorante will open its doors on Tuesday 15th August
