Pinbone’s Jemma Whiteman & Mike Eggert take over the kitchen at 10 William Street (Sydney)

Everyone was sad when Woollahra’s adored Pinbone closed for business last year. I was sad, you were sad, we all shed a tear, and henceforth a communal pining for Pinbone began and has never really gone away since. Deep down, we always knew Pinbone would be living on though, and this month indicates a kind of revival for the brand as chefs Jemma Whiteman and Mike Eggert step into Paddington hotspot 10 William Street for a bit of a kitchen takeover, which will kick off on February 9th and last until June.

Acclaimed Head Chef Luke Burgess will be stepping out and heading on an extended leave to make way for the dynamic culinary duo, who will be interpreting the Italian fare that the restaurant has become famous for. Both Whiteman and Eggert have been working under Burgess in the kitchen since shortly after Pinbone closed so this promotion is a no-brainer, allowing them room to further the Italian style but add their own elements drawn from Chinese and Japanese food.

Of course, we can expect bacon-maple tarts and according to Broadsheet, some char siu bao pork buns with an Italian filling.
