The nation’s capital is known for its spectacularly crisp winters, and as Canberra cools all the way down, the cuisine from Molto Italian, along the Kingston Foreshore, warms visitors and locals alike with its new seasonal menu.
Sticking with the team’s the aim of using only the best locally and internationally sourced produce, Head Chef Giuseppe Pappalardo has created the menu to include plates designed for sharing, like the hand cut pasta, wood fried pizzas and the stuzzichini, fromaggi and salumi menu, accompanied by a refreshing aperativo.
Traditional dishes from the Stuzzichini and Deli menu include the Burrata ($20), with crustacean oil and cherry tomatoes, capers and black olives or the Di Pollo ($22), housemade tortellini in classic Italian chicken broth.
Other in-house pastas featured read like a dream Italian feast: the Tarantina ($32), made with squid ink linguine, or the Maccheroni Matriciana ($27), served with cured pork cheek, slow cooked tomato sugo and finished with pecorino romano. Molto’s signature Cacio e Pepe ($28), where the handmade pasta is served at the table from a giant perocino wheel, and sprinkled with freshly cracked black pepper, is also a must.
Mains change daily, and include options like Vitello (veal) on Mondays, Pollame (poultry) on Tuesdays or Risotto and Gnocchi on Sundays. Each secondi is served with an accompaniment of Borlotti bean ($12) cooked with pork rind, or Patate ($9), rosemary potatoes seasoned with wood-fired garlic.
Winter desserts have also been added to the menu, with the like of Poached Pear, ($15) served in red wine and cinnamon and matched with zabaglione, and the Italian favourite Tiramisu ($15).
Molto’s comprehensive wine list features vino sourced locally and internationally, whilst their cocktail list include bar classics like the Negroni, Americano and Blood Sgroppino.
