Merviale’s intimate Whisky bar, J&M, opens in Sydney

Hospitality group Merivale will officially open doors to J&M, an intimate Whisky Bar located on Level 2 of Angel Hotel, from 11th November 2015. Initially, J&M will function as an exclusive showcase for Chivas Regal, driven by the sensory experience of Chivas 18.

Aimed at a complete but intimate experience, J&M will be one for Whisky enthusiasts and new-comers across Sydney, sticking to the high standard that will come with it being named as a tribute to the legendary Mr. John (J), as well as the ingenious Merivale Hemmes (M), and their multi-level fashion outlet House of Merivale that was once a part of Angel Hotel.

Those who remember the beginnings of Merivale will be familiar with House of Merivale, a boutique fashion outlet that also launched the neighbouring restaurant and espresso bar that was one of John and Merivale’s first forays into hospitality.

The interior has been built around the notes of Chivas 18, inspired by the spirit’s rich green velvets, sleek brown leathers, and copper accents. As such, those heading along can expect to find luxurious chesterfield sofas, a long glass bar, bespoke haberdashery cabinets, and a specially imported drinks trolley named ‘The Sidecar’.

A number of Whiskey experts will be handling the bar, with some of the stock not available for purchase anywhere else in Australia. This air of exclusivity will also extend to the luxurious cocktail menu such features concoctions such as Modern Gentleman, a blend of Chivas Regal 18yo, Antica Formula, burnt oak, and apricot infused Campari, with a cold-drip ice sphere. Also on the menu is the POPSCOF, which is buttered popcorn washed Chivas Regal 18yo, salted caramel syrup, bitters, and Himalayan salt, and the Blood and Marie which takes Chivas Regal 18yo and mixes it up with Cynar, Cherry Heering, Antica Formula, pink grapefruit, and cherry dust.
