Mercure Sydney breathes new life into their resident Eve’s Bar

Borrowing from the urban vibe of New York City, Mercure Sydney have given their Eve’s Bar an essential makeover, determined to positioned it as a go-to for not just guests, but also locals and commuters looking for a reliable option for lunch or after-work drinks.

Sporting a brand new design, the bar now glows with accents of black and red set against an exposed brick wall, reflecting a more relaxed atmosphere that’s also seeped into their more casual food offerings. On the menu now is a wide range of handcrafted burgers, share plates, loaded fries, and plenty of takeaway options. Drinks wise, in addition to the Eve’s Apple Pie seasonal cocktail, they’ve kicked up the range to focus on both classics and signatures that sit alongside an extensive wine list and selection of craft beers and spirits.

“The small bar scene is becoming more and more popular in Sydney and Eve’s Bar is a great addition”, said GM Daniel Barnard. “The design is chic yet welcoming, the menus are themed around freshly prepared American style comfort food and this hint of New York is carried through to the uniforms”.

Not only has Eve’s Bar been reworked, but it now offers a very viable option for those looking for somewhere modern to drink next to Central Station (and Railway Square).
