For the first time ever Matt Moran will be taking his iconic Sydney restaurant Chiswick and hosting a 80-seat pop-up iteration at this year’s Splendour in the Grass. The iconic three-day festival will no doubt benefit from Moran’s planted-to-plated approach which has seen Chiswick, both the original in Woollahra and the extension at the Art Gallery of NSW, become one of Sydney’s most celebrated and consistent dining institutions.
Located in a secret backstage location overlooking the lake, Moran’s pop-up will very much further Splendour’s constantly evolving food scene by offering long table seating and serving a special menu curated by Chiswick’s Head Chef Tom Haynes, overseen by both himself and ex-Chiswick at the Gallery Head Chef Laura Baratto.
Expect the food to be “seasonal with plates made to share”, sticking close to Chiswick’s farm-fresh philosophy which has always been a reflection of Moran’s time growing up on a farm.
“This Chiswick winter menu has been created with love for Splendour in the Grass,” said Haynes. “We’ve sourced local produce where possible with avocados, macadamias and most of the veggies coming from the Byron Bay area.”
The three-course menu will include options such as cos lettuce, spanner crab and avocado tacos; the famous Moran Family lamb shoulder served with eggplant and red pepper chutney with flat bread; roasted beer can chicken with baby corn and pine nuts; a Splendour-colada with roasted pineapple, coconut and rum, and more, including vegetarian and vegan options. Guests will be greeted with a “Kings Dead Tonic” (whatup TDE reference) with cucumber infused Smirnoff vodka, elderflower, grapefruit, basil oil and Organics by Red Bull tonic water, which should be a nice teaser for the dedicated botanic bar.
A brand partnership with Volkswagen will also give Chiswick ticket holders the opportunity to be collected and driven to the show in style all weekend in either their new Polo Beats, which features a custom-designed and tuned sound system from Beats By Dre, or in a Arteon luxury sedan.
Seatings for Chiswick are on Friday 20th July at 12pm; Saturday 21st July at either 12pm, 3pm or 6pm; and Sunday 22nd July at 12pm and 3pm.
