Manta Restaurant to host special dinner with renowned sushi master Hideo Dekura (Sydney)

The team at Woolloomoolo Manta Restaurant and Bar have announced they are collaborating with local sushi master Hideo Dekura to create a special six-course Japanese dinner matched with sake and wine that promises to take guests on a cultural and culinary journey on Wednesday 25th May. The handcrafted raw sashimi dishes showcased by Dekura will focus on the level of freshness that Manta Restaurant upholds as they stay committed to using sustainably caught, local produce.

Born in Tokyo, Hideo Dekura learnt the stringent principles of sushi and sashimi from his parents in who passed on generations of family knowledge, then furthered his own knowledge with years work and study in Japan. Dekura has worked alongside esteemed chefs such as Chef Nodu, and across various locations in Europe and America. Since relocating to Australia in 1974, the award-winning chef has continued his success with the opening of Australia’s first Japanese catering company and more recently, a Japanese cooking school, Culinary Studio Dekura in Chatswood. He has also created several Japanese cookbooks and videos.

Guests can look forward to some sensational seafood like the Moreton Bay Bug sashimi, roasted doumyoujiko, shredded shallot, Japanese sweet rice vinaigrette, red radish, mimosa egg yolk, as well as the juicy flavours of the grilled Wagyu beef tataki, shimeji mushrooms, and truffle honey vinaigrette.
