Manta Restaurant and Bar to host Oyster Appreciation Month (Sydney)

Acclaimed bay-side restaurant Manta in Woolloomooloo has announced that throughout this month of February, the kitchen will be hosting “Oyster Appreciation Month”, showcasing fresh local oysters with a new summer menu, and a bunch of tasting events. Bringing in all the pacific coastline has to offer, Manta has put together quite the program to best demonstrate their commitment to the restaurant’s rich seafood history.

Oyster farmer Tim Dumbrell has shared a decade worth of devotion with Manta Restaurant, and will be heavily involved in the program, drawing on his close ties with oyster farms in Morten Bay and Greenwell Point to provide these shucked treasures to those who visit Manta throughout this month.

“Each oyster has its own unique taste and texture depending on where it’s grown, how it’s grown, and other climatic features”, said Dumbrell. “Some people don’t even know there’s a difference between pearl and edible oysters, which I am eager to educate the diners at Manta’s Oyster Appreciation Month”.

An oyster canape’s and demonstration event will be held on Wednesday 10th February, where Dumbrell will provide a shucking seminar and intimate tasting session to help guests differentiate between several varieties, including Sydney Rocks from the south and mid-north coast, Pacifics, and Angassi oysters.

Head Chef Daniel Hughes will be shaping side flavours to fully complement the natural forms of each oyster, and on February 24th he will be hosting a formal sit down dinner aimed an enlightening guests on the cooking flavours and techniques that enhance these different varieties. The oyster tasting menu will feature 3 different varieties of oysters, Sydney rock, Pacific and Angassi served in different ways and each course featuring a variety of those oysters, paired with wines selected by Manta’s sommelier Christian Denier.

Towards the end of the month, there will be a “Sucks Fest” with a pop-up oyster bar offering freshly shucked oysters on the wharf for passers by on Sunday 28th February.
