Mama’s Buoi launches ‘Pho Festival’ menu with soup inspired rolls, ice creams, and more

For all of their Sydney and Melbourne restaurants, Vietnamese mainstay Mama’s Buoi are running a big celebration of all things Phở from now until the end of August. Designed as a Phở Festival with both traditional and quirky takes on the winter warmer, this ongoing celebration will be exploring the full range of flavours Phở can be used for, including using the classic bowl of rice noodle soup to inspire cocktails, rice paper rolls, and even ice cream.

A Phở festival is a new limited edition menu at Mama’s Buoi, consisting of four Phở inspired dishes and a Phở Cocktail that was created by an acclaimed Hanoi-based mixologist, making use of Gin and Grand-Marnier. The Mama’s Phở Roll is based on the idea of taking Phở broth and deconstructing that into a roll, while the big bowl of Ultimate Seafood Phở is packed with prawns, squid, and barramundi right before its cooked in a fragrant six hour broth. To finish, there’s the Phở Ice Cream which is made with a rich milk gelato infused with Phở flavours and spices.
