InterContinental Sydney introduce new menus to 117 Dining and The Cortile

Iconic hotel InterContinental Sydney have welcomed a new Heard of Pastry in Simon Veauvy who has already begun assisting in revamping menus across the property’s dining options, including 117 Dining and The Cortile.

Joining a talented culinary team which includes Tamas Pamer and Constantin Kautz, Simon shares the philosophy of working closely with NSW producers to ensure that seasonality is the primary force of change to all menus, introducing new and exciting flavours to both dining destinations.

117 Dining will remain strongly committed to the best of land and sea, and those heading along for an intimate dining experience will find dishes like Rangers Valley Black Angus Striploin grilled over charcoal and served with forest mushrooms and sweet onion black sesame cake, and the John Dory grilled in sake and wakame butter with yoghurt, green elk, baby cucumber, and fennel. For dessert, there’s options like the very tempting Fairy Floss which is made of passionfruit, strawberry and rhubarb compote, cardamom crumble, fresh meringue, and delight cream.

The recently opened restaurant will also be taking the next step in their “Taste of” degustation series, introducing A Taste of White Truffle until the end of November where handpicked white truffles will be used to create delectable fare such as Artichokes roasted in cabernet sauvignon vinegar, served with nashi pear, hazelnut, and fresh white truffles. Mains will include Smoked Byron Bay Pork Jowl and Robata Grilled Tajima Strip Loin. The menu is set at $95 per person for six dishes ($135 with matching wines).

On a similar hand, The Cortile’s High Tea has been updated to “All About Berries”, an offering that features an exquisite range of bespoke desserts, paired up with a glass of bubbles. Alternatively, those heading along to The Cortile can also choose a High Coffee menu which matches Vittoria Coffee blends with a selection of sweet and savoury dishes.
