INDU is now doing Saturday lunches for a limited time (Sydney)

Dr. Sam Prince’s INDU has become quite the force on Sydney’s dining scene, edging to the top with charming contemporary Indian and Sri Lankan food inspired by the Doctor’s time spent in the coastal villages of those regions. The underground CBD restaurant has also just changed up their menu, adding a few more dishes to focus more on what works, as well as staying committed to seasonal produce and a unique range that is both distinguished and adventurous. But that’s not the only change INDU have brought so far; in an effort to keep up with demand the kitchen has announced that they will now open for Saturday lunches ahead of the holiday season.

Just know that the menu now features stunners like the Egg Hopper, an open bowl-shaped crepe or sorts filled with eggplant pickle, pomegranate pearls, goat’s curd and coconut sambol, some perfect NSW Lamb Ribs crusted with almond and jaggery spice, and a main of Hot Smoked Rainbow Trout which comes swimming in a coconut milk that’s been infused with lime and cardamom, topped with roe that has been compressed with tamarind.

Perhaps the best new addition is found on the dessert menu though. It’s an epic Peanut Semi-Freddo stacked with jaggery, popcorn, chocolate mousse, salted caramel and cocoa crumbs, an essential dessert for smaller groups. Larger tables shouldn’t look past those cute little bite-sized Gin and Tonic Cheesecakes either, they are nice and fresh with dehydrated orange, crispy coconut and pistachio roti.

Of course INDU have kept their most popular dishes on the menu, including our favourite starter: Smoked Goat’s Leg Dosa, which comes as a mound of steaming, soft smoked goat’s leg with zucchini ribbon raita, pomegranate and a sweet chilli & bacon jam, all on a crisp, buttery flatbread. There’s also signature main “The Great” Lamb Raan which comes as either a half or full serve; it’s the better option for a group feast, especially when you wrap that tender meat in some fluffy golden Paratha.
