Darlinghurst has got a new late-night dumpling go-to with Ginkgo Bar & Dining, a North East Chinese pop-up restaurant from the same team behind Ultimo’s beloved Harbin style restaurant Chulin. Owner Carly Jin and her husband Tim are aiming to make this a showcase for Harbin style dining, with a menu featuring over 16 varieties of seasonal handmade dumplings reflecting multicultural influences, and weekend opening hours that cater to the late-night, early-morning crowd.
The offering will be unique and unexpected with options like a signature Harbin style Chinese wine sausage, the Ginkgo sausage puff, sea urchin & baby spinach dim sum, prawn & cheese triangles, slow-cooked smoked pork knuckle, and pork belly with taro. There will even be a special Yum Cha menu with items like unagi thread rolls, pork wontons in red oil, and matcha coco puffs.
The menus have been pulled together by a team led by Head Chef Zhai and dumpling chef Marble Ng (Lotus, Chefs Gallery) while the drinks are handled by bar manager Carlos Hurworth and consultant Quynh Nguyen with a strong focus on cocktails based on Chinese elements and matching wine for every dish.
“Ginkgo is a celebration of my family story, love of art and passion towards dining and drinking”, explained Jin. “We hope the local community really embraces the venue to become a regular jaunt whether it’s for late night dumplings, large family dinners or a fresh and light cocktail after work”.
Ginkgo Bar & Dining will reside in the space as a pop-up for one year and is dedicated to late night dinners with extended business hours.
