Australia’s most consistently anticipated dessert overlords Gelato Messina will be re-opening the modest space next door to their original Darlinghurst store as an experimental Gelato lab, called Messina Creative Department which features an eight-seater table for seven-course degustations. Taking bookings from next Wednesday 20th April, the lab will be dabbling in both savoury and dessert dishes designed by Chef Remi Talbot, a man who has sharpened his culinary skills in the kitchens of Japan, France, and Denmark following his role in helping Messina in their earlier days.
As reported by Broadsheet Sydney, the lab will feature two sittings every day, running for about an hour each.
Brand Manager Sian Bishop told Broadsheet that the dishes would be experimental and aimed at challenging the palate with odd combinations like pear and elderflower sorbet served with burrata; or roasted chocolate sorbet with aged balsamic. Each course will be matched with a non-alcoholic drink. Think wattle cola with lemongrass and vanilla vinegar. The aim here is to use locally sourced and seasonal produce in ways that take diners out of their comfort zones.
