Surry Hills’ popular fried chicken and sneaker hybrid Butter is officially expanding out west, opening a two-level concept store in Parramatta this week. The hip hop flavoured shop will be much bigger than the Surry Hills store, which has built a cult following over the past year and a half.
Chicken, champagne and sneakers will be the order at Parramatta’s new hot spot with the kitchen led by 2015 Young Chef of the Year Julian Cincotta with Butter’s beloved menu plus a few special editions created especially for the new store. This includes the Butter 3000 sandwich, which features a crispy thigh fillet with smoked pastrami, pickled daikon and kabayaki sauce on a steamed milk bun.
The 85-seat ground floor of the new Butter will be slinging fried chicken options and champagne while the top level is dedicated entirely to curated streetwear and rare sneakers, all of which can be purchased by customers. Both floors have been carefully designed by award winning architect Tarek ElKassouf who has customised all fittings and furniture found throughout the store. Guests should expect granite table tops and slick high chairs contrasted with tonal greys, metal and industrial concrete as well as a hand-made light sculpture made to reflect the silhouette of a champagne bottle with the light bulbs floating in the high ceiling like bubbles.
A curated list of Champagne cocktails will also be featured on the ground floor, including interesting concoctions like the Blackberry Hammer-Thyme with Veuve, Gin, blackberries and thyme, and the P&P – pomegranate liqueur with prosecco and pomegranate seeds. A range of Hennessy cocktails will also be offered.
