Former Quay chef joins The Rocks’ historic Scarlett Restaurant (Sydney)

Joey Dela Victoria’s enviable portfolio is an impressive flurry of hats and stars, all which have come to shape his career as he has worked in the likes of Balzac (when it had two chef hats) and Quay (when it had three chef hats), London’s famous Maze Restaurant, and two Michelin starred The Ledbury. The undeniable qualifications have followed him to his new role at the helm of Scarlett Restaurant, the long-standing and celebrated restaurant of the charming Harbour Rocks Hotel in The Rocks, one of the most popular properties in the MGallery by Sofitel hotel series.

Grounding his work in an area of Sydney with so much history, Dela Victoria has settled into Scarlett’s kitchen by bringing in some big changes, presenting diners with a strong blend of Asian and European flavours. He and his team have been making use of these influences to add both big and small flourishes to the restaurant’s modern Australian dishes.

For example, classic Asian ingredients are being used to lift various dishes on the dinner menu like the Charcoal Beef which is now served with kimchi risotto and maple jus, or the Prawn & Lobster Ravioli with kombu broth. Also on the menu are interesting fusions like Congee with spanner crab, pork belly and butter foam for dinner, as well as classic desserts like Mille Feuille with hazelnut, pistachio and lemon, and an elegant Chocolate Assiette.
