Ex-Merivale chef leads the charge at Liverpool’s new Macquarie Bistro (Sydney)

Helping refresh and refocus a big player in Liverpool’s dining scene, chef Leigh Mcdivitt (ex-Merivale) has teamed up with Clayton Ries to head the big renewal of the Macquarie Hotel’s bistro. The team have moved on from Collin Fassnidge’s Banksia Bistro to transform the new project into a star dining destination for the greater Western Sydney region.

Promising an elevated dining experience, the pair are bringing a produce-driven refresh to the menu with a dedication to house-made and seasonal ingredients used to spruce up old pub classics, along with desserts like the brownies served up with stout cream, bacon ice cream pops, and Jack Daniels salted caramel and honeycomb ice cream.

“After we opened the Banskia, Leigh and I wanted to continue moving further to the suburbs and eliminate the need to travel to the city for entertainment and good food options”, said Clayton. “The hotel had the bare bones there but it just needed a heart, something that can grow with the community we are trying to create”.

The renewed bistro now sits alongside a new open-air beer garden surrounded by a timber deck made from Japanese maple.
