Eat’aliano by Pino brings classic Italian to Windsor (Melbourne)

With the opening of their brand new restaurant Eat’aliano, restaurateur Alessio Ali and Head Chef Pino Russo have decided to bring a little taste of the Mediterranean to the neighbourhood of Windsor, where Asian cuisine has dominated so far. The pair, who previously worked together at Mascalzone Pizzeria in Williamstown, aim to make their wood-fired pizzas the star of their authentic Italian eatery.

Their philosophy is simple, “eat Italian cuisine in an Italian setting, prepared and served by Italians”. As a result, everything in the 70-seat restaurant;  from the waiters to the music, and right down to the cookbooks on display, are all Italian.

Russo, who has previously worked at Mulata and La Svolta, uses recipes and techniques passed down to him from his Italian grandparents, to give a warm homely touch to his creations. Along with a few select pasta dishes, Eat’aliano’s features an extensive list of antipasti, vino and wood-fired pizzas. Guests can choose between classic pizza toppings such as margherita and marinara, or go with something a little more fancy such as the tartufata with mushroom cream, sausages, truffle oil and shaved parmigiano.

With pizza being an obvious focus here, the commitment to using only high quality, well-rested dough is a defining feature of the menu.
