Darlo Country Club is Darlinghurst’s latest cocktail bar and diner (Sydney)

Tapping into the aesthetic of exclusive country clubs throughout California, Sydney’s newest opening Darlo Country Club is the new bar and diner at the site of the former Victoria Room. Completely transforming the space with cactus green beams, soft linen paneling, brass elements, and a lush new coat of paint, the vibrant new bar looks to bring a pocket of old world Hollywood to Darlinghurst, accompanying the distinguished atmosphere with a playful range of high quality cocktails and food.

The inspired, luxurious scene will be helped along by 100 meters of sturdy rope, which have been incorporated into an eye-catching wall feature, complemented by a grand pastel pink entrance, an imposing 6 foot custom-made chandelier, and bespoke call buttons helping the flow of first class service throughout the venue.

A very experienced team stands at the helm of the Darlo Country Club. Michael Hwang and Eddie Levy (of The Lobo Plantation) join Adam Abrams and Julian Tobias (of The Island) following the success of their winter pop-up bar The Chalet, drawing on their collective talents with additional help from Julius Yates (also from Lobo), who assisted in creating the cocktail menu.

A few of the highlights on the cocktail list include The Bubbarita, which is DCC’s version of a margarita with bubble-gum infused Tequila, Blue Curacao, lime juice grape citrus foam, and orange blossom flame; The Don, a homage to the godfather of Tiki with Pampero Especial, cherry puree, pineapple juice, passionfruit puree, lemon juice, ginger syrup and mint; and Eton Fizz, with Tanqueray, strawberry shrub, lemon juice, thyme syrup, egg white and a dash of soda to create a liquid version of an Eton Mess.

The food menu includes dishes like the signature Lobster & Truffle Mac’n’Cheese, Confit Duck Leg Spring Rolls, and sliced Scotch Fillet with chimichurri and bitter leaf salad.
