Cabarita institution Angelo’s on the Bay has made some big changes after three decades (Sydney)

Former Director of Hotels and Bars at The Keystone Group, Simon Barbato, has made some significant changes over at Cabarita institution Angelo’s on the Bay now that he is the newly appointed owner. This means a large refresh to the bayside dining and function venue and a menu overhaul by new Head Chef Mario Pedavoli (ex-The Victoria Room).

Dedicated to retaining its local charm, Barbato has brightened up the 140-seated federation-style cottage by making full use of the panoramic views over the nearby parklands and Sydney city. Aiming for a space that perfectly facilitates long lunches and romantic dinners, he has worked with Chef Pedavoli to push the focus towards “casual sophisticated” dining with a European leaning towards dishes like dry-aged yellowfish tuna served with avocado, lime mousse, avruga caviar and sorrel leaves; pasture-fed steak tartare with quail egg, cornichons and pane carasau; and pasture-fed eye fillet with wild mushroom ragout, Jerusalem artichoke and truffle vinaigrette.

Bringing it into the modern age, there’s also a dedicated shared menu which features whole snapper with lemon, watercress and radish as well as a six-hour braised lamb shoulder with gremolata.
