Burger joint fit for royalty opens on Melbourne’s Collins Street

It looks like the rebirth of the quintessential American burger experience is here to stay, with the launch of flagship burger joint Royal Stacks at 470 Collins Street in Melbourne.

The venue evokes a cross between the grandeur of a New York style lobby, but with a decidedly Melbourne twist, with the fit out including an urban wall garden and bronze counter tops. The kitchen is also just as magnificently decked out, with state of the art equipment designed to produce consistent burgers, even under the most extreme pressure, with the chrome grills being the centrepiece.

But it’s the menu, of course, that will make Royal Stacks a new fan fave. Burgers on the menu include the classic Single Stack (with a beef patty, tomato, butter lettuce, American cheddar, special burger sauce and pickles), the Prince Harry (horseradish, shallot and gherkin mayo sauce) and The King (made with legendary mac’n’cheese croquettes). The patties are GMO free, pasture fed beef with no added hormones or antibiotics, and the bread is baked daily.

Dani from Royal Stack is working with Mark Mariotti from 7 Apples in St Kilda to create frozen custard flavours for desserts like the New York cheesecake, peanut butter and Kinder Surprise.

“I’ve been visiting the US for several years, joining forums and meeting with chefs and venue owners to spend time in their kitchens and see how things work. I’ve been mind blown by so much that the US do so well in the likes of Shake Shack and In-N-Out Burger. Even frozen custard has been around since 1918 in the US, yet it’s so rarely seen in Australia. Bringing this kind of culture but focusing on ethically and locally sourced ingredients is something I’ve always been excited about,” says Dani.

The launch of Royal Stacks follows a succession of venues Dani has opened, including Dandenong Pavilion, Grand Trailer Park Taverna, Easey’s and Truck Stop Deluxe. A second Royal Stacks venue will launch in Brunswick, with other locations yet to be announced.
