Australian-Japanese warehouse eatery Stanton & Co opens in Rosebery (Sydney)

Parlour Group, known and loved for their Sydney venues like Riley Street Garage and Surly’s American BBQ, have just opened up a new dining destination in Rosebery’s The Cannery. Shaped into the former factory turned modern warehouse precinct, Stanton & Co is an attractive multifaceted space with a dedicated dining room, expansive bar, and open kitchen.

Named for the property developer responsible for turning Rosebery into an industrial suburb in the early 1900s, Stanton & Co has designed on becoming one of Rosebery’s most treasured dining spots, an ambition overseen by Group Executive Chef Regan Porteous and Head Chef Marcelino Papio, both whom have put together a menu of Australian cuisine with a focused Japanese influence.

“With contemporary Australian cuisine, it’s all about letting the produce speak for itself, while adding complexity through texture, technique, and tastes that play on a diner’ palate”, said Porteous, who wants to highlight his love of Japanese cooking with dishes like a Tuna Tartare with puffed rice, cured egg yolk and rice cracker, or the Morton Bay bug tempura with bottagra and ponzu mayo.

The space itself was curated by Alexander&Co, who have also worked with Parlour Group on their other venues including Surly’s and Busby’s. They’ve created a space well-connected to the group’s other restaurants but twisted towards The Cannery’s long history, resulting in the use of materials like solid oak and steel, softly worn leather upholstery, a solid walnut and oak bar with a zinc top, park benches, and other custom made furniture including classic upholstered chairs. The theatrical open kitchen has been crafted using stone slabs with glazed brickwork.
