ABODE Bistro and Bar launches new paddock-to-plate tasting menu (Sydney)

Darling Harbour’s award winning ABODE Bistro & Bar has recently unveiled its new 6-course tasting menu, featuring a selection of dishes, from entrée to dessert, for $65 per person or $35 with matched wines, making this one of the area’s most affordable set dining menus.

Head Chef Anthony Naylor’s menu was inspired by the simplicity of fresh, local produce, as well his knowledge of modern Australian cuisine and vast international experience, favouring high quality, seasonal produce at its best.

“To me, food has always been about sourcing the very best produce and making that produce the hero of the dish” Naylor says. “By working closely with our local suppliers we can utilise the freshest Australian produce available, which allows my team to enhance the flavours and showcase the distinctive elements in an honest, open style. Our philosophy is focused on making honest food that’s elegant yet approachable. We’ve created this tasting menu to invite guests to experience an explosion of well-balanced, fresh and authentic flavours.”

The set menu is created with a starter, an entree, a salad, two mains and finally, a dessert, starting with dishes like Pan-Seared Scallops with cauliflower puree, pickled radish, shaved broccoli, pancetta, and lemon oil; featuring mains like the Flinders Island Rump of Lamb plated smoked aubergine, onion marmalade, asparagus, sheep’s milk fetta, olive paint, and confit tomato; and finishing with desserts like the Banana Parfait with coconut sponge, salted cashews, and butterscotch sauce

An à la carte menu is also available, and features pan-fried ocean trout, caramel yoghurt, carrot purée, spinach, botarga and trout roe. There is also a corn-fed chicken supreme with ricotta gnocchi, Tuscan cabbage and tarragon jus.

Naylor places great emphasis on the chargrilled local meats, with menus featuring Riverina rib eye, Grainge tenderloin, Tajima Wagyu sirloin and Berkshire pork cutlet, all served with duck fat chips.

Desserts include the restaurant’s carefully selected of local NSW cheeses, served with Blue Mountains honey, maple hazelnuts, apple, house-made fruit loaf, pear chutney and lavosh. Sweet treats include the chocolate and hazelnut fondant with espresso foam, chocolate nib tuile and house-made vanilla ice cream, or the gluten free almond and orange cake with cream cheese icing, elderflower, candied orange and blood orange sorbet.
