Maurice Terzini and Adrian Reed open Luigi’s Hot Pizza in Canggu (Bali)

Maurice Terzini, the renowned chef behind Australian icon Icebergs Dining & Bar in Sydney (and others), has teamed up with Adrian Reed (of Motel Mexicola) once again to open Luigi’s Hot Pizza in the heart of Bali’s Canggu junction. The duo, whose first Bali collaboration Da Maria Bali is a beloved spot for Italian dining, have designed this new venue to offer locals an affordable, lo-fi and unpretentious approach to high quality pizza with drinks, music and the playful, relaxed atmosphere that mirrors the beachside locale.

A custom-made pizza oven has been imported directly from Naples to help the kitchen produce quality Neapolitan style pizzas, with handmade pizza dough that is naturally risen for 24 hours. Chef Steven Skelly will complement the pizza menu with a range of simple salads like spinach with saffron pickled carrots, raisins and toasted nuts.

Music plays a big part of the new venture, with an emphasis on low-fi tunes spanning rock, hip hop, soul and more, thrown out by DJ’s who will play seven nights a week on a Funktion-One soundsystem. The owners want the energy for mirror that of Reed’s famous Motel Mexicola with a more family-friendly feel.

Cocktails seem to be of a particular tropical lean, bringing in Terzini’s numbered drink program adapted for the Bali climate. That means guests can order up everything from the “No. 8” with DM Bitter Apperitico, vodka and grapefruit, to the “No. 147” with vodka, coconut, pineapple, passionfruit, lime and falernum.
